Today, along with a whole crew of my blogging buddies, we are celebrating all things pumpkin (again)! I am so excited to be taking part in the #virtualpumpkinparty for the second year in a row. There are sweet AND savoury options being brought to the table and they all look stupendous.

Last year I made a dulce de leche pumpkin ice cream (and affogato), but this year I wanted something warm and cozy to pair with my coffee.

These baked pumpkin doughnuts are made with a buttermilk base along with some cinnamon, brown sugar, and honey. They are dipped in a maple-buttermilk glaze for some added fun as well. I am IN LOVE!

Buttermilk Pumpkin Doughnuts

Buttermilk Pumpkin Doughnuts

Prep Time: 15 minutes

Cook Time: 16 minutes

Total Time: 31 minutes

Yield: 6 doughnuts

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1 large egg
  • 1/4 cup brown sugar
  • 2 tbsp liquid honey
  • 2 tbsp melted unsalted butter, cooled
  • 1/3 cup pure pumpkin puree
  • 1/4 cup buttermilk
  • 1 tsp pure vanilla extract
  • For the maple buttermilk glaze:
  • 3/4 cup confectioners' sugar
  • 2 tbsp buttermilk
  • 1 tbsp pure maple syrup
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg

Instructions

  1. Preheat oven to 350 degrees F. Spray a 6-mold donut pan with non-stick spray and set aside.
  2. In a large mixing bowl, combine the flour, baking powder, salt, baking soda and cinnamon.
  3. In a medium mixing bowl, whisk together the egg, brown sugar, honey, cooled melted butter, pumpkin puree, buttermilk and vanilla until smooth. Pour the wet ingredients into the dry and mix until the batter is smooth.
  4. Spoon the batter into the doughnut molds, filling to just below the top of each mold. Bake for 16 to 20 minutes until lightly golden brown around the edges. Let cool in the pan for 5 minutes. Slide a knife around the edges of the doughnuts to help loosen them out and place on a cooling rack. Allow to cool for 5 to 10 minutes before glazing.
  5. For the glaze, in a large bowl, whisk together the confectioners’ sugar, spices, and buttermilk.
  6. Dip the doughnuts into the glaze, and put them on a rack lined with parchment to catch any drips. Let the glaze set completely before serving.
