Happy Friday! With Valentine’s Day coming up fast I figured something chocolate was in order. And so, here we are: doughnuts!

Whether you’re with a lover, a friend, or a cat this Sunday I highly recommend beginning your morning with a glazed doughnut.

These donuts came about one morning after proclaiming to the rooftops that coffee and chocolate belong together (perhaps due to the fact that I had just consumed too much coffee). I wanted espresso and chocolate to be one in a wonderful glazed doughnut and I wanted to be able to make these doughnuts without any trouble. A baked doughnut was the answer, and boy, and I glad these babies turned out as well as they did.

The base of these doughnuts is a simple sour cream chocolate cake. I added some fresh ground espresso and then when I made the glaze I added some more espresso for a solid morning punch.

And there I had it – 8 chocolate doughnuts made from start to finish in 35 minutes. That’s just WRONG!!

But so right.

I’m finding Sunday mornings to be quite busy now that I’m in the middle of marathon training, so making some baked doughnuts are the perfect fix to my “how do I make a fun and fancy-seeming breakfast for Valentine’s Day without spending all morning on it?” question.

For Valentine’s Day dinner we’ve got homemade gnocchi and molten lava cakes on the menu. What are you guys planning?

Whatever you do, try to begin with a doughnut. You won’t regret it.

Espresso Glazed Chocolate Doughnuts

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Yield: 8 doughnuts

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup Dutch processed cocoa powder
  • 1/2 tsp ground espresso (or instant espresso powder)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 2 tbsp unsalted butter, melted
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 tsp pure vanilla extract
  • For the glaze:
  • 1 1/2 cups confectioners' sugar
  • 1/2 tsp ground espresso (or instant espresso powder)
  • 1/2 tsp pure vanilla extract
  • 3-4 tbsp milk

Instructions

  1. Preheat oven to 350 degrees F. Grease a 6-cavity doughnut pan with baking spray and set aside.
  2. In a large bowl, whisk together the flour, Dutch cocoa powder, espresso, baking powder, baking soda, and salt.
  3. In a medium bowl, add the melted butter. Whisk in the sugar, egg, sour cream, milk and vanilla.
  4. With a rubber spatula, fold the wet ingredients into the dry. Scoop the batter into a piping bag. Pipe the batter into the doughnut pan, 3/4 full. Place the doughnut pan into the oven and bake for
  5. 14 -16 minutes, or until puffed and a toothpick inserted into the center comes out clean.
  6. Cool in the pan for 5-10 minutes, before transferring to a cooling rack to cool completely. Repeat with remaining doughnut batter (I was able to make 8 doughnuts).
  7. While the doughnuts are cooling, prepare the glaze by whisking all of the ingredients together in a wide shallow bowl.
  8. Dip each donut half way into the glaze. As you lift each doughnut out, shake it a little to remove excess glaze, then place on a cooling rack to set.
